Ingredients
For the Cake
- 8 oz cream cheese
- 2 cups + 2 tablespoons granulated sugar
- 3 eggs
- 3 ½ cups sweet rice flour
- 1 tablespoon baking powder
- ½ cup butter, melted
- 1 tablespoon vanilla extract
- 15 oz cream of coconut
- 1 cup whole milk
- 8 oz crushed pineapple
- ¼ cup brown sugar
Directions
- Preheat the oven to 350°F
- In a large bowl, cream together 8 oz of cream cheese and 2 cups of granulated sugar.
- Once combined, stir in 3 eggs, one at a time.
- The add 3 ½ cups sweet rice flour, 1 tablespoon baking powder, ½ cup melted butter, 1 tablespoon vanilla extract, 15 oz of cream of coconut, 1 cup whole milk, and 8 oz of crushed pineapples and stir to combine.
- Pour into a greased 9”x13” pan, and sprinkle with ¼ cup of brown sugar and 2 tablespoons of granulated sugar.
- Bake in a 350° oven for 1 hour. Allow to cool before serving. Enjoy!
